Metodo Classico Brut
A jewel of our territory, obtained with a second fermentation in bottle, Metodo Classico.

The grapes selected for the cuvée are grown exclusively in the vineyards of the locality Zell, in Trento, at the altitude of 500 above the sea level, an area which is renowned for the cultivation of grapes to be used for the sparkling wines.
The vines are planted according to the “girapoggio” system, literally translated “around the hilltop”, on a big natural terrace with a south exposure, towards the Adige valley; the soil is not very deep, it is draining and rich of slivers of marly limestone.
An integrated plant protection system is used in the vineyards, preferring the use of products, which are not synthetic manufactured.
Finally, we are gradually giving up the use of chemical weeding in favour of techniques which respect the environment and are more efficient for the biodynamic of the soil.

The grapes are picked by hand and placed in small crates; the harvest takes place before the grapes are completely ripe, in order to preserve their acidity and their freshness. Once in the winery, the grapes are de-stemmed, and before they are gently pressed, they are allowed a short maceration on the skins on the press. Afterwards, the juice is clarified through natural settling, followed by a careful racking.
The yeasts are inoculated and the fermentation takes place in stainless steel tanks at 15/17° and ages then on the fine lees until springtime.
In spring the best wines are selected and the cuvee is prepared for the second fermentation.
The wine ages on the lees in the bottle for 30 months, before the disgorgement takes place.

Straw yellow in colour, with a fine and persistent perlage.
Elegant on the nose, fruity and fragrant, with a light hint of yeast. Fresh, mineral and good structured on the mouth. Long on the finish, this wine can be drunk in every occasion.
