DENOMINAZIONE DI ORIGINE PROTETTA
GRAPE VARIETY
The finest Chardonnay grapes grown on the hillsides around Trento, with a good sun exposure, at an altitude between 350 m and 600 m above sea level are used.

WINEMAKING AND SECOND FERMENTATION
The grapes are hand-picked and vinified using the most modern techniques (soft pressing, clarification through natural sedimentation, addition of cultured yeasts, fermentation at controlled temperature (18-20°C) and maturation on the fine lees. In January following the harvest the cuvée for the base wine is prepared; in March the tirage takes place, and the wine undergoes a slow second fermentation in bottle for at least 20-24 months, before it is disgorged.


DESCRIPTION
601 is straw yellow in colour; complex and elegant on the nose, with fruity notes and  a fine yeasty aroma. Fresh on the palate with a creamy note and a fine and lively perlage; long on the finish.

IT FITS VERY WELL WITH
Ideal as an aperitif, it can accompany the whole meal.




Drink lightly chilled (8-10° C)
