Vigneti delle Dolomiti
Indicazione geografica tipica
GRAPE VARIETY
Autochthone grape in Trentino, it has been defined the prince of Trentino for its enological characteristics. The name comes probably from the name of a place ,“Alle Teroldeghe”.
PRODUCTION AREA
The grapes are grown in the area comprised by the 3 provinces of Trento, Bolzano and Belluno, which share the Dolomites, inscribed in the UNESCO World Heritage list in 2011.
The mountains and the rivers have defined the cultivable areas; Teroldego prefers light and permeable soils, such as the alluvial ones.
WINEMAKING
The grapes are de-stemmed and crushed and the juice undergoes the fermentation under controlled temperature for 2/3 weeks, if we consider the maceration. There after the wine undergoes the malolactic fermentation, which aims to reduce the acidity. The wine ages in wood and stainless steel tanks.
