LILIUM MÜLLER THURGAU SPUMANTE BRUT
GRAPE VARIETY
The basic cuvée for Lilium is made exclusively from Müller Thurgau grapes. It is an aromatic and delicate variety and its characteristics become more pronounced due to the considerable differences between day and night-time temperatures during ripening.
WINEMAKING AND SECOND FERMENTATION
The grapes are hand-picked and vinified using typical white wine making methods, i.e., fermentation without the skins. The new wine is subsequently refermented in stainless steel pressure tanks to trap the escaping carbon dioxide and keep it in the wine, thereby rendering it sparkling. This is known as “Charmat” method; once dry, the wine is kept on the fine lees for around 30 days and subsequently bottled at low temperature to retain its natural sparkle.
