GRAPE VARIETY
The name comes from a resort in Burgundy, where this grape is born. This grape has been confused for a long time with Pinot Bianco.

PRODUCTION AREA
The grapes are grown in different areas of Trentino, because it is able to adapt to the different soils; the best results are obtained on gravely and calcareous soils, better if on the hillsides, where the temperatures are cool and there is a good ventilation also during the summer.

WINEMAKING
The grapes are de-stemmed and placed in a pneumatic press where they are softly pressed. The juice is then clarified and fermented under controlled conditions in stainless steel tanks at 17 – 19° C. The wine ages on the fine lees for a few months and gains thereby in complexity;it is then prepared for the bottling.

DESCRIPTION
Straw yellow in colour, fruity on the nose with notes of apple. On the palate it is fine, elegant, persistent and well structured.

IT GOES VERY WELL WITH
Fish, full flavoured first courses and white meats.
